To create a widget to follow listening activity for one friend only you can create a custom widget.
Go to your Settings > Customize and add widget.
Create a new widget and select the friends you want to have on your widget.
Then go to your home screen and create a new widget.
Then you need to edit it (click on it when it's shaking) and select the widget you want.
